Boiling water scorches the leaf and turns matcha bitter. Let boiled water rest for two to three minutes before pouring — aim for roughly 75–80°C.
Matcha clumps easily once tinned. Always sift it through a fine mesh strainer before whisking, even for lattes — it's the difference between silky and gritty.
Circular stirring gives a thin, flat cup. Whisk briskly from the wrist in a quick "W" or "M" motion for 15–20 seconds until a fine foam forms.
More isn't better — it just turns bitter. Start light, especially with Midori, and adjust the ratio to taste as your palate settles in.
